Shin of beef, also known as beef shin or shin beef, is a cut of beef taken from the foreleg of the cow. The shin is a tough and well-exercised part of the animal, which is why it contains a lot of connective tissue. Due to this, it is a relatively inexpensive cut of meat, but also requires a long, slow cooking method such as braising, stewing or pressure cooking to break down the collagen and make it tender.

Shin of beef is particularly well-suited for making rich, flavorful, and comforting dishes like beef bourguignon, osso buco, and beef shin ragu. It can also be used to make a classic British dish such as a hearty beef and ale stew. The meat is very flavorful, with a deep beefy taste, due to the connective tissue which will break down during cooking and provide the meat with its rich taste.
